1) When salsa gets bright, reach for bright wine

Tomatillo, lime, pico de gallo, and pickled onions love high-acid wines. Acidity keeps the pairing crisp and makes each bite feel lighter.

  • Try: Sauvignon Blanc, Albariño, dry Riesling, Grüner Veltliner
  • Great with: fish tacos, chicken tinga, veggie tacos, anything with citrus

2) Spice needs a little chill (and sometimes a touch of sweetness)
